Alfalfa is regarded as the “father of all foods”. This leguminous herb grows up to a height of 50cms. It is mainly rich in Vit. K and also contains other vitamins like Vit. A, B,C,D and E. It also contains minerals like sodium, Calcium, Manganese, Chlorine and silicon. The seeds contain 33.2% protein and 4.4% mineral matter; saponins with the aglycones, soyasaponin B and E and polyamines, diamino propane and nor spermine.
It has 8known digestive enzymes that enable the food to be assimilated properly within the body and raises the basic nitrogen exchange.
It is rich in essential enzymes, minerals and vitamins, a preventive of high blood pressure, diabetes, peptic ulcer, to strengthen the digestive system.
It helps to remove toxins and neutralizes acids. It is good for anemia, menopause, arthritis, gout, stabilizing blood sugar levels, balancing the pituitary gland, and detoxifying the blood and kidneys. Alfalfa helps soothe ulcers, the liver and acts as a heart tonic. It helps with estrogen production and morning sickness. It has in it a natural fluoride and is a mild diuretic.
Alfalfa may be used for reducing fevers and rheumatism and has a mild laxative effect. It is good for cystitis or an inflamed bladder and relief from bloating and water retention.
Amaranth is a moderately tall, broad-leafed, bushy type of plant that grows about six feet in height and produces a brightly colored flowery head containing a very large number of seeds (up to 60,000). These seeds are the source for amaranth cereal and flour.
Like quinoa, buckwheat, and millet, amaranth is not technically a grain, but because it is enjoyed in meals like other true grains, it is usually referred to as such.
Amaranth contains 30% more protein than rice. In regards to calcium, iron, and magnesium,it contains about four times as much calcium as wheat and twice as much iron and magnesium. It does not contain any gluten and is safe for those who are gluten intolerant.
The seeds of amaranth species contain about thirty percent more protein than cereals like rice, sorghum, and rye. In cooked and edible forms, amaranth is competitive with wheat germ and oats – higher in some nutrients, lower in others.
Its light & dry qualities dry up excess mucus and Kapha dampness, which benefits the lungs and respiratory system. Its dryness can dry up mucus congestion in the respiratory system. Amaranth is also a diuretic. It is soft but crunchy, sweet but dry. It energizes but at the same time relaxes the muscles. It is especially soothing and cooling to the eyes, which is evidence of its Pitta reducing effects.
It is a perfect alternative to oatmeal in the spring diet. Although light, it is still satisfying. It is perhaps the ideal comfort food.
The Barnyard millet is a wholesome grain over and above common cereal grains like rice, wheat, semolina. It holds benefits rendered by millet grains, and is easily available across India.
Barnyard millet is a good source of highly digestible protein and at the same time is less caloric dense compared to other cereals and is gluten free.
It is an excellent source of dietary fibre. The carbohydrate content of Barnyard millet is low and slowly digestible, making the barnyard millet a low Glycemic index food and hence recommended for diabetics as a nutritional food supplement.
It is a good source of Iron (18.6mg in 100gms of raw millet) which is richest among all millets and cereal grains.
In Ayurveda, flaxseeds are known to stimulate Agni (Digestive fire). It helps promote better digestion and regulated bowel movements, thanks to the high concentration of mucilage. It helps cool down increased Pitta and acts as anti-inflammatory. Ayurveda considers them as Balya—a provider of strength. They help balance the Vata element and are very effective in treating its disorders.
Flaxseeds are considered a superfood, the best natural alternative to support the immune system, augment vigour and muscular strength.
Flaxseeds and flax oil are known as Medhya—brain booster—and contain Omega 6 and Omega 3 fatty acids that enhance the functions of the human brain.
Daily consummation can help improve glycemic control in obesity with pre-diabetes. Flaxseeds regulate the metabolism of cholesterol and fat in the body. They have the ability to boost HDL or good cholesterol and to reduce LDL or bad cholesterol and triglycerides.
They are extremely effective in preventing the infestation of free radicals, toxic substances, salt, uric acids and also prevent the risk of liver diseases.
Flaxseed is heavy, slimy and hot in nature and can vitiate Pitta and Kapha when used in excess.
Kodo is an annual tufted grass that was domesticated in India almost 3000 years ago.It is a monocot perennial grass that grows up to 150 cm tall.
The grains vary in colour from light red to dark grey, and like most millets the fiber content is very high.It is a good source of vitamins – Vitamin B6, Niacin, folic acid and minerals such as calcium, iron, magnesium and zinc.
Kodo is high in fiber and prevents gain in weight. It also helps to prevent rise in cholesterol and triglyceride levels and is a functional food to manage weight and promotes weight loss.
Anti-diabetic compounds in Kodo are quercetin, ferulic acid, p-hydroxybenzoic acid, vanillic acid and syringic acid. Thus regular use is recommended for diabetic patients. Kodo millet grains consist of polyphenols and antioxidants. The polyphenols possess antimicrobial action against certain bacterias.
Kodo millet consists of low fat content and fiber content is higher and makes you feel fuller after consuming less quantity itself, therefore it avoids over eating and lessens the weight, thereby controls obesity.

Pumpkin seeds are recommended for all three Doshas -Vata, Pitta and Kapha (in moderation). Pumpkin seeds are warming, sweet, heavy, oily and blood building. Pumpkin seeds are an excellent source of proteins and essential amino acids as lutein and lycine. It also contains relatively large amounts of various essential minerals like Potassium, Chromium and Sodium. Seeds are a good source of Magnesium, Zinc, Copper, Manganese and Selenium. Pumpkin seeds and their oil comprises anti-inflammatory properties that are helpful in treating arthritis.
Tryptophan, an essential amino acid found in pumpkin seeds and other vital nutrients in the superfood, helps fight anxiety and depression. Being a rich source of magnesium and phosphorus, that are vital for bone health, Pumpkin seeds can help strengthen the bones.
A diet rich in fiber is essential in keeping your gut in good shape. Pumpkin seeds are a great fiber source (5.2 grams of fiber per ounce of whole pumpkin seeds).
Pumpkin seeds have been traditionally used to kill worms as they are anti-microbial, antifungal and antiviral.

It is low on the glycemic index indicating it can be useful in stabilizing blood sugar levels, and beneficial for the prevention of type 2 diabetes. Quinoa is said to be a tonic for the heart due to its ability to lower triglycerides and LDL cholesterol levels.
Adopting an ayurvedic diet, one should eat grains combined with vegetables, dairy, nuts and seeds, according to your suitable constitution (VATA, PITTA & KAPHA).
Even though quinoa is suited best for Kapha; Vata and Pitta constitutions can also have this grain with proper food pairing.

Ayurveda says sunflower seeds help reduce inflammation, help in cholesterol management, and improve detoxification.
Consuming soaked Sunflower seeds helps manage constipation by reducing dryness of the intestine.
